Zucchini Saute

Ingredients

    3 tbsp butter
    1/4 cup chopped green onions
    3 cups shredded zucchini (the Cuisinart food processor is a gem for shredding)
    1/2 cup shredded bell pepper (green, yellow or red- your preference)
    1 1/2 tsp fresh lemon juice
    1/2 tsp salt
    1/8 tsp pepper
    1/4 tsp dried dill or 1/2 tsp fresh dill

How to Make It

    Melt butter in a large skillet; add green onions and cook until tender. Add shredded zucchini, shredded pepper, lemon juice, salt and seasonings.
    Cook uncovered over medium heat for 5 minutes. Stir occasionally to fully mix. Be careful not to overcook and end up with mush.
