VitaMix Carrot and Cumin Soup

1 lb/450 g carrots, thinly sliced
4 cups/960 ml chicken broth
Freshly ground pepper, to taste

How to Make It |
Heat the butter and oil in a saucepan, add the onions and a pinch of salt, and cook until softened and golden. Add the cumin and carrots and saute a few minutes more. Add the broth, orange juice, salt and pepper. Bring to a boil, then simmer about 20 minutes or until the carrots are tender.
Place ingredients in the Vitamix Pro series container. Secure lid. Select Variable 1. Turn on the machine and slowly increase speed to Variable 10. Puree for 15 seconds or until smooth.
Season to taste. Garnish with lime zest.
Yield: 2 quarts/2.0 Liter (8 servings)
Note: The cumin gives this soup a unique flavor, so it is important to use good quality spices. You will be able to taste the difference.
Serving Idea: For an added touch, garnish this soup with finely diced apples.
