Vegetable Stock


Makes 1 gallon

Ingredients

    1 lb leeks, white parts only, roughly chopped
    1 lb carrots peeled, roughly chopped
    1.5 lb white onion, roughly chopped
    1 lb celery, roughly chopped
    1 sprig thyme
    1 Tbsp black peppercorns
    1 Bay leaf
    1.5 gallons cold water

How to Make It

    Place all ingredients in a stockpot and bring to a boil. Reduce heat to a low simmer and cook for 1 hour. Strain and cool.
