Ingredients |
1 1/2 cup of each brown rice, diced onion and diced celery
1 tsp Creole Seasoning (Tony Cacheres Original is excellent!)
1/2 tsp each of pepper, garlic powder, parsley, onion powder and Worchester sauce
Panko bread crumbs or oatmeal flakes as needed
3-4 tbsp walnuts, finely chopped
12 oz bottle of Heinz chili sauce
8-10 oz jar of plum sauce
1 tbsp mango jam or preserves
3 tbsp apricot jam or preserves
|
How to Make It |
For the Meatballs: Mix all meatball ingredients. Use a small sized cookie scoop to form meatballs and bake on cookie sheets about 30-40 minutes until done. Yeild 60-70 bite sized meatballs.
For Sugar Plum Sauce: Combine chili sauce, plum sauce, orange juice, jalapeno juice, worchester sauce and pomegranate juice in a saucepan and bring to a low boil. Slowly stir in bbq sauce, honey, jam and chili flakes. Simmer for about 25 minutes allowing sauce to thicken.
Place cooked meatballs in sauce, serve and enjoy.
