Old River Road Marshmallows


Top your freshly brewed hot chocolate with these incredible home-made marshmallows!

Ingredients

    2 envelopes flavored gelatin
    3/4 cups water
    1 1/2 cups sugar
    1/2 cups plus 2 tbsp light corn syrup
    1/8 tsp salt
    2 1/4 tsp vanilla extract
    3/4 cup confectioners sugar, plus additional rolling and coating

How to Make It

    Oil a 2 quart baking dish with vegetable oil. Line dish with aluminum foil and lightly oil. Set aside. In the bowl of an electric mixer, soften the gelatin with 1/2 cup plus 2 tbsp of the water.
    Place the sugar, corn syrup, remaining water and salt in a heavy saucepan. Bring to a boil and cook over high heat until the mixture reaches 234-240 degrees or the soft ball stage on a candy thermometer.
    With the whisk attachment at high speed, beat the hot mixture slowly into the gelatin until the mixture is very stiff, about 15 minutes. Add the vanill then beat for 30 seconds. Pour the mixture into the prepared dish and smooth with an oiled spatula. Let stand at room temperature for 10-12 hours uncovered.
    Sift confectioners sugar onto a cutting board. Turn the marshmallows onto the board. Lightly oil marshmallow cutters. Sift additional confectioners sugar into bowl. Cut out marshmallows and roll in confectioners sugar.
