Mt McKinley Dish


This is (or was!) a top-secret favorite family recipe. It originated from California with friends there
and has been a family favorite for more than 30 years. Although it should be sold for millions, I'm offering it to you.

Ingredients for Meat Sauce

    2 lbs leanest ground beef
    2 onions, chopped
    2 6-oz cans tomato paste
    2 8-oz cans tomato sauce
    32 oz water
    4 tsp sugar
    4 crushed cloves of garlic
    2 tsp oregano
    2 tsp salt
    2 tsp chili powder
    2 tsp whole cumin seed

How to Make It

    Add onions and ground beef to pan and brown. When brown, drain excess fluid.
    Add the tomato paste and tomato sauce and mix well. Then add the remaining ingredients.
    Simmer meat sauce for 40 minutes, and then add 2 cups of cooked rice to meat sauce. While meat sauce is simmering, make dressing.

Ingredients for Dressing

    8 oz cream cheese
    2 cups mayonnaise
    1 1/2 cup buttermilk
    1 tsp salt
    1 tsp pepper
    1 tsp onion salt
    1 tsp garlic powder

How to Make It

    Add all ingredients to blender and mix.

How to Serve It

    Put meat sauce on tortilla chips, then top meat sauce on tortilla chips with: grated cheese, chopped black olives, chopped green onions, diced tomatoes, sliced avocados, chopped cucumbers, shredded lettuce, salsa, taco sauce.
    Lastly, top with dressing.
    This is a really tasty dish and is great to serve for Cinco de Mayo!
