Holiday Orange Eggnog


Makes 10 cups or 20 servings

Ingredients

    12 ounces orange juice concentrate (Minute Maid preferred)
    4 cups whole milk
    1 cup heavy whipping cream
    2 tsp clear vanilla (Mexican vanilla preferred)
    6 eggs (Eggland's Best 100 mgm Omega 3, 25% less saturated fat eggs preferred)
    Finely grated fresh orange peel
    Nutmeg

How to Make It

    In a blender, place orange juice concentrate, milk, whipping cream and vanilla. Starting on low, blend on high at least 30 seconds.
    Add the eggs and again starting on low, blend on high an additional 30 seconds. Cover and chill at least 30 minutes or as long as 2 days.
    To serve, shake or blend briefly and sprinkle with freshly grated orange peel and nutmeg to taste. Enjoy!
