Curry Chicken Salad


Recipe adapted from Chef Jason Porter

Ingredients

    8 oz grilled chicken chunks
    1 tsp curry
    1/4 cup red onion, finely chopped
    2 celery stalks, finely chopped
    1 green apple, peeled and diced
    1/4 cup fresh parsley, finely chopped, packed loosely
    1/4 to 1/2 cup low-fat mayonnaise
    1/2 tsp stone ground mustard
    salt and pepper to taste
    Optional Additions:
    Blue Cheese or Gorgonzola
    Golden Raisins
    Cashews

How to Make It

    Mix all ingredients together and serve with a low-carb, high fiber tortilla or a couple of large leaves of butter lettuce.
