Stacie's Curried Halibut

Try this tasty take on halibut, from Habitat co-owner Stacie Wilson

Ingredients

    2 medium onions, finely chopped
    4 oz butter
    2 tbsp mild curry powder
    2 tbsp plain flour
    1 pint milk
    4 tbsp mango chutney
    4 tsp desiccated coconut (dehydrated or powdered)
    1 package angel hair pasta
    1 lb halibut
    3 cloves garlic, finely chopped
    Juice of one lemon

How to Make It

    In a large saucepan, fry the onion in butter until golden. Sir in the curry powder and cook for a minute. Blend in the flour and cook, stirring for a further minute. Gradually blend in the milk. Bring to a boil slowly and cook, stirring until the sauce thickens. Stir in the chutney and coconut. Keep warm; set aside.
    Chop Halibut into bite-sized chunks, fry in butter, garlic and lemon juice until done. Stir halibut into curry sauce.
    Cook angel hair pasta according to package directions.
    Serve curried halibut over angel hair pasta. Preparation time 1 hour. Serves 6-8
