Cold Sesame Noodles


Recipe adapted from Weight Watchers

Ingredients

    6 oz wheat spaghetti noodles
    1/3 cup reduced-fat smooth peanut butter
    1/3 cup water
    3 Tbsp ketchup
    2 Tbsp Hoisin sauce
    2 Tbsp reduced-sodium soy sauce
    2 Tbsp packed light brown sugar
    1 Tbsp Rice Vinegar
    1 tsp asian(dark) sesame oil
    2 scallions, chopped
    8 oz chicken, cubed
    1 Tbsp sesame seeds

How to Make It

    Cook the noodles or spaghetti according to package directions; drain, rinse with cold water, and set aside.
    In a small skillet brown chicken with 1 Tbsp olive oil and sesame seeds; set aside.
    In a small saucepan, combine the peanut butter, water, ketchup, hoisin sauce, soy sauce, brown sugar, vinegar, and oil. Bring to a boil over medium-high heat, stirring constantly, until well mixed. Remove from the heat and cool about 10 minutes.
    Toss the noodles with chicken and sauce, sprinkle with scallions and serve- or pack it up for your next lunch.
