Mixed Berry Almond Crisp

Ingredients

    Filling
    8 cup mixed fresh berries: blueberries, raspberries, salmonberries, strawberries
    1 tbsp quick-cooking tapioca
    2-3 tbsp sugar- according to berry tartness
    2 tbsp fresh lemon juice

    Crisp Topping
    1 cup all purpose flour
    1/2 cup regular rolled oats
    2/3 cup brown sugar (firmly packed)
    1 tsp ground cinnamon
    1/8 tsp salt
    1/2 cup melted unsalted butter
    1/2 cup finely chopped almonds

How to Make It

    Toss berries with tapioca, lemon juice and sugar. Set aside.
    For the crisp- Whisk together flour, oatmeal, sugar, spices and salt. Stir in butter and almonds. Coarse crumbs will form. Pour filling into a 9" square or round ungreased pan. Use your fingers to form topping into 1/2 inch crumbs and spread over filling. Bake unitl filling bubbles and topping is light and golden- about 55 minutes. Let cool and serve.
