Aebleskiver


A breakfast celebratory delight! Habitat owner Lori Atrops first tasted them in the Danish village of Solvang, California. She got the recipe there as well. They are like- but better than- the hole of the donut. The kids can help make the batter and roll the cooled and drained aebleskivers in powdered sugar. Then watch them inhale these tasty Danish pastries. The best aebleskiver pans- which Habitat carries- are made of cast iron and have DEEP cups for filling with batter.

Ingredients

    2 cups flour
    1/2 tsp salt
    1 1/2 tsp baking soda
    1 tsp baking powder
    2 cups buttermilk
    3 eggs seperated
    1 tsp vanilla
    3 tbsp melted butter

How to Make It

    Sift the flour, salt, soda and baking powder into a bowl. Add buttermilk, egg yolk and vanilla and mix thoroughly. Set aside. In a small mixing bowl beat egg whites until stiff but not dry. Fold into batter. Add the melted butter and mix gently.
    Heat aebleskiver pan over high heat. Fill each "cup" with one tbsp vegetable oil. Lower heat to medium. Fill each "cup" with batter. After all the cups have been filled, it's time to start turning them in the same order as the "cup" filling.
    Dust with or roll in powdered sugar. Individuals can also scoop a special jam on top. Enjoy!
