GREEN PEPPERCORN STEAKS

Serves 4; Prep time 10 minutes, Cooking time 14-20 minutes

Ingredients

Lean fillet steaks (less than 1/2 lb each (6 oz)
Thyme sprigs to decorate
Potatoes to serve with Peppercorn Sauce (below)

Peppercorn Sauce

1 tbsp
Green peppercorns in brine
1 tsp
Balsamic vinegar

Cherry tomatoes, halved

How To Make

First, make the sauce. Heat all the ingredients in a shallow pan until the tomatoes are soft. Cook the steaks on an oiled grill over a hot barbecue for 2-3 minutes on each side for very rare, 3-4 minutes for rare and 4-5 minutes for medium rare. Allow to rest for 2 minutes to give the muscle time to relax so the meat is both moist and less tough.

Spoon the sauce over the steaks and garnish with thyme sprigs.
Serve with boiled potatoes.
