BLACK BEAN & CORN SALSA

INGREDIENTS: HOW TO:

2 cans black beans, drained and

2 cans whole kernel corn, drained

1 small red bell pepper

1 small green bell pepper 1 small yellow bell pepper Remove seeds & ribbing and then dice all peppers

1 large red onion

1 medium tomato

1 avocado - Dice all three

 

3 cloves garlic

1 – 2 jalapenos - Both finely minced

3 TBS finely chopped cilantro

1 tsp salt

1/2 Cup olive oil

1/2 Cup red wine vinegar

1 lime to taste

HOW TO MAKE IT >>

  1. Place rinsed beans and 2 cans of corn into a large bowl.
  2. Add the rest of the ingredients and refrigerate for several hours to let the flavors meld.
  3. Serve with tortilla chips as salsa or a separate salad.
